Pepperoni Pizza Dip Recipe

Difficulty: Easy | Total Time: 30 mins | Makes: 6 to 8 servings

The flavors of pepperoni pizza have found their way into plenty of snack recipes onCHOW, including quick bread and jalapeño poppers. Here, it transforms into a quick dip in the food processor, with pepperoni slices, mozzarella, ricotta, cream cheese, red pepper flakes, and dried oregano. Pile the mixture into a pie plate, top it with more mozzarella and pepperoni, and bake until bubbly and melty. Serve it with toasted breadsticks or garlic bread for dipping and your guests will be shocked by its uncanny pizza flavor!

Special equipment: You’ll need a 9-inch pie plate for this recipe.

INGREDIENTS
  • 2 1/2 cups shredded whole-milk mozzarella (about 8 ounces)
  • 2 ounces pepperoni slices (about 26 thin slices), quartered
  • 8 ounces cream cheese, cut into large pieces
  • 7 ounces whole-milk ricotta cheese (about 1 cup)
  • 1/4 cup finely grated Parmesan cheese (about 1/2 ounce)
  • 2 tablespoons coarsely chopped oil-packed sun-dried tomatoes
  • 1 teaspoon kosher salt
  • 3/4 teaspoon dried oregano
  • 1/2 teaspoon red pepper flakes
  • 1 1/2 pounds toasted ciabatta, soft breadsticks, or garlic bread, for serving
INSTRUCTIONS
  1. Heat the oven to 375°F and arrange a rack in the middle.
  2. Place half of the mozzarella, half of the pepperoni, the cream cheese, ricotta, Parmesan, sun-dried tomatoes, salt, oregano, and red pepper flakes in a food processor fitted with the blade attachment. Process until smooth, about 45 seconds (there may still be a few small bits of pepperoni).
  3. Transfer the mixture to a 9-inch pie plate and smooth the top. Evenly sprinkle with the remaining mozzarella and pepperoni.
  4. Bake until the dip is heated through and bubbling around the edges and the cheese on top is melted, about 15 minutes. Serve immediately with the ciabatta bread, breadsticks, or garlic bread for dipping.

Simple and easy to do… That is what I like about it and ready for the crowd in 15 minutes…Awesome.

This is a definite must try Restaurant  if you happen to find yourself in Clarksville, Tennessee or in a nearby community.  It is well worth the trip.  The food there is incredible and the prices are even more incredible.

I am so picky about calamari that it is not funny.  Having grown up in an Italian neighborhood for a very long time, I ate calamari so many different ways on Christmas Eve.  This calamari is delicately fried and served with a homemade on premises Wasabi Sauce that is just to perfection.

They call it an appetizer for one… Hubby and I split an order for a meal…

Chicken Thighs with Spinach in White Wine


This is what I ended up making in exchange for what I started out with thanks to a few reblog ideas …

Yes I showed you the end before the beginning lol…

I also did make the bowties and cherry tomatoes in olive oil and chicken broth with a few spices and garlic then a bit of sprinkled cheese on top as garnish…

Now to begin:

Cherry Tomatoes

I walk outside and pick mine…

I did add a few other tomatoes from our other flower pots only because they were ready

As you can tell the weather here has done a number on this poor baby but it is still bearing…

Italian Parsley a few pinches in the chicken…

Italian Basil just a hint with the bowties and cherry tomatoes…

I use a smaller jar near cooking area and just transfer when empty… this went into both pans to start

So did this and yes I am lazy…This is actually more economical…

I added the chicken thighs that were boneless and I had tried to cut a pocket they are just too small…

Added my bag of spinach

Added just enough chicken broth to start a nice steam and covered partially to allow spinach to steam over the chicken thighs…

Added just a hint of white wine after the spinach was steamed to keep the chicken from drying …I go by smell…then added a bit more of chicken broth to mixture about a total of 1/4 box.

1/4 of box was added to the cherry tomatoes in the pot beside the frying pan

Sprinkled in the bowties to accommodate the amount of tomatoes and readjusted the liquid with tomato bisque soup since I did not have tomato paste.

Then stirred and partially covered allowing both dishes to just simmer till we were ready to eat.

Sprinkle cheese is optional…

And Again here it is…..Voila!!!! Sooooo Tasty…. Sooooo Stuffed….

When I wake in the morning…they just have no sense of humor…

Life is Peachy


She is a six year old that we have adopted into our family from our local shelter…she was not abandoned… She had to be given up by a very loving family who had to relocate for the United States Army overseas and she could not be processed in time to go with them. The owners made the shelter promise to find her a wonderful home.

Her adoption life did not quite go as well though…

1. Parent one said that she would not walk on a leash and brought her back after one night with bruised ribs a damaged front paw and several ticks which she has since had to be medicated for.

2. An elderly couple adopted her and that evening the wife had a stroke and was hospitalized.  The husband cried while returning her making the shelter promise to find her a wonderful home.

3. Here we are.  It was love at first sight as we walked in to look at what a cross between a jack russell and a chihuahua looked like…never did see the dog lol as it was in the puppy area and Peachy was in the main office.

Which might explain why she loves my office so much…

She is doing quite well with our other dog Trina and now our other dog is so happy to no longer be alone…even the cats will walk up and kiss her it is so cute… She will allow me to take her picture.  When hubby comes near with his camera she will run and hide behind me and try to pretend she is not in the room lol…you can tell by the picture where she is at my lap…that was after about twenty attempts by his camera…

Poor fella and he thought that he was getting a new lap dog lol…in time perhaps…

Our prayer is that there is still family in the area who are able to see our posts that we have made on various websites regarding adopting older dogs with Peachy’s picture and that somehow the news will travel to that family across the sea to let them know that

LIFE IS PEACHY for their baby…finally

TOO TRUE TO LIFE

A young couple moved into a new neighborhood.
The next morning while they are eating breakfast,
The young woman saw her neighbor hanging the wash outside.
“That laundry is not very clean”, she said.
“She doesn’t know how to wash correctly.
Perhaps she needs better laundry soap.”
Her husband looked on, but remained silent.
Every time her neighbor would hang her wash to dry,
The young woman would make the same comments.
About one month later, the woman was surprised to see a
Nice clean wash on the line and said to her husband:
“Look, she has learned how to wash correctly.
I wonder who taught her this.”
The husband said, “I got up early this morning and
Cleaned our windows.”
And so it is with life. What we see when watching others
Depends on the purity of the window through which we look!
