Oven BBQ Short Ribs

My version at $ 2.39 per pound keeps us on our budget

I can always tell what dishes I have made that my hubby has really enjoyed, as he shows up with the ingredients to those dishes above and beyond the grocery list that I have sent with him on days that I can’t go on the Military Base at Ft. Campbell, KY.

Since I had to stay and meet with prospective vendors for an upcoming fundraiser in our area he went shopping with my list.

This huge rack of beef short ribs is what the extra item was today.  Last time that I made them, he insisted that he was going to hate them because that is a grilling food.

** To explain, my hubby is not one of those “Grilling hubby’s” that you see on television.  If I can’t be out there to guard the food it resembles charcoal when he brings it back into the house.  **

Now if our food looked like these pictures it would be wonderful, However…

See the smoke in this picture… well I can still see the food so this is minor compared to our grill…thank goodness he does turn it down on low but the smoke is still thick…

To make a long blog short I simply cut the ribs and place them in my roaster pan and cover them with a mixture of Slow Simmering Barbecue sauce (Brand I used today was Kraft) and mix it with fresh honey.  I turn the ribs every 15 minutes and bake them on 325 F oven for about 2 hours.  The ribs are well coated in the mixture so they will not be the least bit dry.

He is drooling just anticipating these ribs today out of the oven …

Jolly Roger Cake


I found this cake recipe yesterday and it made me long to have children in the house again. It was so adorable that I just had to share it with you…

The recipe really seemed easy enough…

Ingredients
      • 1 box cake mix
      • Water
      • oil
      • eggs
      • Tray 15 x 12 inches, covered
      • 1 cup creamy vanilla frosting
      • 1 chocolate-covered mint patty
      • 1 gumball
      • 1 slice marshmallow
      • 1 yellow ring-shaped hard candy
      • 1 roll Fruit by the Foot strawberry
      • 1 black licorice rope
      • Square-shaped candy-coated gum
      • Chocolate decors
Methods/steps
  1. Heat oven to 350 degrees. Grease bottoms and sides of 1 (8-inch) and 1 (9-inch) round cake pan with shortening or cooking spray. Make cake as directed on box, using water, oil and eggs. Pour into pans. Bake as directed on box. Cool 10 minutes; remove from pans to cooling rack. Cool completely, about 1 hour.
  2. Use serrated knife to cut 9-inch cake in half and cut hat as shown in diagram. Remaining half of 9-inch cake will form body of pirate. Cut 8-inch cake as directed in diagram. On tray, place cake pieces. Cut ears and nose from small pieces of cake; attach to cake with small amount of frosting. Cover; freeze 1 hour or until firm.
  3. Reserve 3 tsp. dark chocolate frosting; frost hat with remaining dark chocolate frosting. Mix vanilla frosting with reserved chocolate frosting. Frost head, ears, nose and body of pirate with tinted vanilla frosting. Add mint patty for eye patch, marshmallow slice and gumball for eye, and ring-shaped candy for earring. Cut fruit snack into shapes for stripes and mouth; place on cake. Cut licorice to fit hat. Add gum for teeth and chocolate decors for whiskers. Store loosely covered at room temperature.

That is all there was to it…I thought what a neat idea.  Something new.  I am sure that the sweets on it are not good for you yet it is so cute to look at…
Enjoy…I have not made it since there is no one here to eat all of that cake…my two little men are still in Indiana for the funeral of their grandpa…so I have to wait for such an adventure so I can send it home to them….

Dinner For Hubby


Have You ever had really big plans for a fabulous dinner in your head and ended up with something entirely different when you have finished?  That was our dinner tonight…

In response to http://modernchristianwoman.com/?p=818 Mediterranean Foil Packs, Cooking on the Grill…

So after chopping my potatoes and seasoning them I carefully wrapped them in the non stick Reynolds Wrap Foil and placed my two pre-marinated Bourbon Sauce Steaks on top since hubby did not want any veggies with it…

I carefully babysat the grill till steaks were almost done then he calls out to me and states that he wants his stake made like I did the other nite in that wrap thingy…

I had made an Empanada that had some left over steak and cheese for him for lunch.

Granted he had eaten two of them for lunch that day…

He had dipped them in the old stand by’s of …

Salsa and Sour Cream….

So here sit the lonely potatoes….

He did enjoy one of the Empanada’s as it had a half of a steak in in and was quite large….

This is the left over second one… with the other half of the steak and cheese that he will have for lunch tomorrow….lol…

Unless he gets into it after I have gone to bed tonight…

Well I started out with a plan…even had pictures to prove it till I accidentally deleted them…

Murphy’s Law Some days just takes over….

TOO TRUE TO LIFE

A young couple moved into a new neighborhood.
The next morning while they are eating breakfast,
The young woman saw her neighbor hanging the wash outside.
“That laundry is not very clean”, she said.
“She doesn’t know how to wash correctly.
Perhaps she needs better laundry soap.”
Her husband looked on, but remained silent.
Every time her neighbor would hang her wash to dry,
The young woman would make the same comments.
About one month later, the woman was surprised to see a
Nice clean wash on the line and said to her husband:
“Look, she has learned how to wash correctly.
I wonder who taught her this.”
The husband said, “I got up early this morning and
Cleaned our windows.”
